Boston Cream Parfaits

Ingredients

1/2 cup WATKINS Vanilla Dessert Mix

1/4 cup sugar

1/2 cup water

2-1/2 cups skim milk

3 tbsp chocolate syrup

1-1/2 cups reduced-calorie whipped topping


 

Cooking Directions

Combine WATKINS Vanilla Dessert Mix, sugar, water and milk in medium saucepan; mix well. Place over medium heat and cook, stirring constantly, until mixture comes to a boil and begins to thicken. Remove from heat and chill quickly by placing saucepan in a larger pan of ice water. Cool to room temperature, stirring occasionally. Pour half of pudding into 6 parfait glasses. Top with half of chocolate syrup, spooning syrup along edge of glass. Top with 1 cup of whipped topping. Repeat with remaining pudding and syrup. Garnish with remaining whipped topping. Refrigerate until ready to serve.

Coconut Cream Cheese Brownies

Ingredients

3 eggs

1 cup melted butter

1-1/2 tsp WATKINS Original Double-Strength Vanilla  

2 cups sugar

1-1/4 cups all-purpose flour

1/2 cup WATKINS Baking Cocoa

1/2 tsp WATKINS Baking Powder

1/4 tsp salt

1 cup chocolate chips

Filling

2 packages (8 oz each) cream cheese

2 tsp WATKINS Coconut Extract

1/4 cup sugar

1 egg

2 tbsp milk

3/4 cup WATKINS Coconut Dessert Mix

 

Cooking Directions

In a large mixing bowl, combine eggs, butter and vanilla. Combine dry ingredients; add to egg mixture and mix well. Stir in chocolate chips. Set aside half for topping. Coat a 9 x 13" pan with Watkins Cooking Spray. Spread remaining batter into prepared pan. In a small bowl, beat cream cheese, coconut extract and sugar until smooth. Add egg, milk and dessert mix, beating just until combined. Carefully spread filling over batter. Drop reserved batter by tablespoonfuls atop filling. Cut through batter with a knife to swirl if desired. Bake at 350°F for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Refrigerate until serving.


Makes 3 dozen.
